Heat Pump Dryer Drying Mango Slices Plan
I. Objective
To produce golden-colored, soft, and nutritious dried mango slices using a heat pump dryer.
To control temperature, humidity, and time during the drying process to ensure consistent quality of dried mango slices.
II. Equipment and Materials
Heat pump dryer
Fresh mangoes
Stainless steel trays
Food-grade gloves
Citric acid or vitamin C (optional)
III. Process Flow
1. Mango Preprocessing
Selection: Choose mangoes with moderate ripeness, free from pests and diseases, and without mechanical damage.
Cleaning: Wash the mangoes thoroughly to remove surface dirt.
Peeling: Peel the mangoes using a fruit knife.
Slicing: Cut the mangoes into uniformly thick slices, recommended thickness is 5-8mm.
Color Protection (Optional): Soak the mango slices in a 0.5% citric acid or vitamin C solution for 5-10 minutes to prevent oxidation and discoloration.
2. Tray Loading
Evenly spread the mango slices on the drying trays, ensuring they do not overlap.
Avoid overloading each tray to ensure proper air circulation.
3. Drying
First Stage: Set the temperature to 50-55℃, humidity to 30-40%, and drying time to 2-3 hours. The purpose of this stage is to remove surface moisture from the mango slices.
Second Stage: Set the temperature to 60-65℃, humidity to 20-30%, and drying time to 4-6 hours. The purpose of this stage is to further remove internal moisture from the mango slices, achieving the target moisture content.
Third Stage: Set the temperature to 55-60℃, humidity to 10-20%, and drying time to 1-2 hours. The purpose of this stage is to evenly distribute moisture in the mango slices, improving their texture.
4. Cooling
After drying, remove the mango slices and let them cool naturally to room temperature in a cool, ventilated area.
5. Packaging
Pack the cooled mango slices in sealed bags or containers and store them in a cool, dry place.
IV. Key Control Points
Slice Thickness: Slice thickness directly affects drying time and product quality. It is recommended to control it at 5-8mm.
Drying Temperature: Too high a temperature can cause the surface of the mango slices to harden, making it difficult for internal moisture to evaporate; too low a temperature will prolong drying time and reduce efficiency.
Drying Humidity: Too high humidity will extend drying time and increase the risk of bacterial growth; too low humidity can cause the surface of the mango slices to crack.
Drying Time: Adjust drying time based on slice thickness, tray loading, ambient temperature, and humidity to ensure the dried mango slices reach the target moisture content (generally 15-20%).
V. Precautions
Maintain hygiene during operation to avoid contamination.
Monitor the state of the mango slices during drying and adjust parameters as needed.
Store dried mango slices in sealed containers to prevent moisture absorption.
